SIMPLE & BRIGHT CARROT SLAW
INGREDIENTS
- 4 C Green & red cabbage (finely shredded)
- 3-5 Carrots (shredded)
- 5 Green Onions (sticks) (thinly sliced)
- ¼ C Olive oil (extra virgin)
- 2 T Apple cider vinegar
- 1 T Sugar
- 1-2 Garlic (cloves) (finely chopped)
- 1/8 t Cumin (ground)
- 1/8 t Oregano (dried)
- ½ t Sea salt (fine)
- Black pepper (to taste) (freshly ground)
DIRECTIONS
- 1. Put the shredded carrots, cabbage, green onions, salt & black pepper in a large bowl
& set aside. - 2. Put olive oil, ACV, sugar, garlic, cumin, oregano & mustard in a small bowl & whisk until
the sugar dissolves. - 3. Pour the contents of the small bowl over those of the large bowl.
- 4. Toss a few times to combine.
- 5. Cover & place in the refrigerator to chill for at least 3-4 hours.
- 6. Serve when chilled.
