Oriental Chicken Pasta
INGREDIENTS
- For Salad
- 1 lb Pasta OR Linguine (cooked per package directions & drained)
- 1 1⁄2-2 lbs Chicken Breasts (boneless) (skinless) (cooked & cut into 1 inch cubes)
- 2 C Peas (baby) (frozen) (thawed)
- 1 Carrot a(peeled) (sliced)
- 1 Bell Pepper (red) (cored &cut into julienne strips)
- 4 Onions (green) (chopped)
For the dressing
- 1⁄2 C Soy Sauce (light)
- 1⁄4 C Canola Oil
- 1⁄4 C Rice wine vinegar
- 2 T Sesame oil
- 1 T Garlic (minced) (dark brown)
- 1 T Ginger (fresh) (grated)
- 2 Hot Chili Oil drops
- 2 T Sesame seeds
DIRECTIONS
- 1. In a large bowl, combine the cooked pasta, cooked chicken, peas, carrots, red bell
pepper & green onion. - 2. In a small bowl, whisk the soy sauce, canola oil, rice wine vinegar, sesame oil, garlic,
brown sugar, ginger & chili oil. - 3. Pour over chicken pasta mixture & toss to combine.
- 4. Sprinkle on the sesame seeds.
- 5. Cover & refrigerate 2 hours before serving.
