Golden Brown Crispy Fried Cauliflower
INGREDIENTS FOR THE SAUCE
- 1 T Sesame oil
- 3 Garlic (cloves) (minced)
- 1 Ginger (knob) (grated)
- ½ C Vegetable broth
- ½ C Soy Sauce OR Mock Soy Sauce
- 1/3 C Rice Vinegar
- ¼ C Sugar (more to taste)
- 2 T Tomato paste
- 2 T Corn Starch (dissolved in 1-2 Tablespoons of cold water)
To make the sauce
- 1. Heat the sesame oil in a small saucepan over medium low heat.
- 2. Add the ginger & garlic & stir fry for a minute or 2.
- 3. Add remaining ingredients & whisk to combine.
- 4. Bring to a low boil & simmer for another 20-30 minutes or until the sauce is thickened.
- 5. Add more sweetness & citrus to your taste.
INGREDIENTS FOR THE CAULIFLOWER BATTER
- 1 C Flour
- 2/3 C Corn Starch
- 1 1/2 t Baking Powder
- 2 t Salt
- 4 Eggs
- ½ C Water (as needed)
To make the batter
- 1. Whisk all the bagger ingredients until a loose batter forms.
- 2. The batter should be thick enough to cling to the cauliflower.
- 3. Cover it but stay loose enough to easily drip off & adjust thickness with water.
INGREDIENTS FOR FRYING THE CAULIFLOWER
- 1 Cauliflower (head) (Cut into small florets)
- Oil (a deep layer) (for frying)
- Scallions & sesame seeds for topping.
TO FRY THE CAULIFLOWER
- 1.Pour oil into a heavy bottomed skilled to make it deep enough so it will cover
the cauliflower about half way which probably ends up being a few cups. - 2. Heat the oil over medium heat.
- 3. Drop a small bit of batter in the oil to test it & when it rises to the & bubbles the oil is ready.
- 4. Dip Cauliflower florets in the batter & let the excess drip off before gently setting in the oil.
- 5. Fry for a few minutes on each side, then flip, repeating sides several time if necessary
until you get a nice golden brown fried exterior. - 6. The addition frying time helps to make it a little crunchier.
- 7. Remove & set on a cooling rack with paper towels underneath which will keep it crispy
which is much better then placing it on a plate or bowl with paper towels. - 8. Toss the fried cauliflower with the sauce just enough to cover & sprinkle with the scallions
& sesame seeds.
NOTE
We have tried with sautéed cauliflower instead of battered & fried
& it worked but it wasn’t nearly as good.
It’s good to serve this with rice.
