Parmesan Scalloped Potatoes
With Spinach
INGREDIENTS
- 2½ lbs Yukon Gold potatoes (cut into ¼-inch slices) (about 8 cups)
- 3 T Extra-virgin olive oil, (divided)
- 1 Onion (small) (finely chopped) (about 1 C)
- 2 Garlic (cloves) (cloves) (minced)
- 3 T Flour (all-purpose)
- ½ t Salt
- ¼ t White or Black pepper
- 2½ C Milk (low-fat) OR Almond Milk
- 1 lb Spinach (frozen) (chopped) (thawed)
- 1 C Parmesan Cheese (grated) (divided)
DIRECTIONS
- 1. Position racks in upper & lower third of your oven & pre-heat to 425 F.
- 2. Toss potatoes with 1 T oil in a large bowl until well coated.
- 3. Divide between 2 large backing sheets & spread in an even layer.
- 4. Roast, rotating the pans from top to bottom about halfway thru until tender &
beginning to brown (20-25 minutes). - 5. Meanwhile, heat the remaining 2 T oil in a large saucepan over medium heat.
- 6. Add onion, cook stirring frequently until very soft & golden brown (5-8 minutes).
- 7. Add garlic, cook stirring until fragrant (1 minutes more).
- 8. Add flour, salt & pepper & cook stirring (1 minute ).
- 9. Add milk, cook stirring & scraping up any brown bits at the bottom of the pan.
- 10. Increase heat to medium high, cook, stirring until the sauce thickens & bubbles
(3-5 minutes). - 11. Remove from the heat & Squeeze spinach to remove any excess moisture & stir
into the sauce. - 12. When the potatoes are done, remove them from the oven & pre-heat the broiler.
- 13. Transfer half the potatoes to a 2 quart boiler save baking dish.
- 14. Spread half the sauce over the potatoes & top with ½ C cheese.
- 15. Add the remaining potatoes & top with the remaining sauce & cheese.
- 16.Broil, watching carefully until the sauce is bubbling & the cheese is beginning to brown
(1-5 minutes) depending on your broiler. - 17. Let it stand for 5-10 minutes before serving.
NOTES
To make it easier to make, do these thing ahead of time.
- 1. Roast potatoes up to 30 minutes
- 2. Prepare sauce, cover & refrigerate for up to 1 day & gently re-heat until steaming
before combining with the potatoes & cheese.
